I certainly wouldn't label them grind. Stick with "Meshuggah".

if i had to put meshuggah into a genre it would be math metal, yeh. to explain it I guess you gotta understand that their music is related in some way to mathematical rhythms. it's really hard to explain. if you have studied music (particularly music theory) it's all to do with how rhythms overlap eachother and come back around again. ie. they might play 3/4 time signatures on top of a 4/4 sig. that produces an overlap which comes back around at some point. listen out for tomaas' cymbal hits. they usually signify the beginning/end of an overlapping sig. not really "maths" tho is it... but it's complicated for sure.

Yeh they have a heavy use of polyrhythms.
